Jeanette's Meatloaf
1 kg mince
1 large finely chopped onion,
2 finely chopped bacon rashers,
1 egg,
1 tabs curry powder,
2 tabs chopped parsley,
1 cup soft breadcrumbs,
½ cup milk,
½ cup water,
salt to taste.
Sauce - ¾ cup tomato sauce, 2 tabs Worcestershire sauce, 1 teasp instant coffee powder, 1 tabs butter, 2 tabs brown sugar, ½ cup water, ½ teasp lemon juice
1. Blend together mince, onions, bacon, egg, curry powder, parsley and breadcrumbs.
2. Gradually add milk and water and season to taste with salt.
3. Shape into a loaf and place in a greased baking dish.
4. Cook in a moderately slow oven for 30 mins.
5. Combine sauce ingredients in saucepan and bring to the boil.
6. Simmer for 5 minutes and pour over loaf.
7. Continue to cook for a further 45 minutes, basting often. Serves 6-8.
