Chocolate Potato Cake

This is a cake I used to make when I was about 14 years old ... Almost a classic now!! Enjoy it, cos its yummy, just a little different.

Ingredients:
125g butter
2/3 c. castor sugar
2 eggs
1/2 c. cold, mashed potato
1 1/4 c. self-raising flour
1/3 c. cocoa
1/3 c. milk

Method:
  1. Grease a ringpan and lightly coating with flour - shake out excess.
  2. Mix the cocoa and self raising flour together. Set aside.
  3. Cream butter and sugar together in a small bowl until light and fluffy.
  4. Beat in eggs, one at a time until well mixed in.
  5. Stir in half the potato, flour and cocoa mix and half the milk.
  6. Stir in the remainder ingredients, stir until smooth.
  7. Spread mixture into prepared cake tin.
  8. Bake in a moderate oven for 40 minutes.
  9. Stand for 5 minutes before turning out onto a wire rack.
  10. Cool the cake before spreading with icing.
ICING:

Beat 90g of butter until smooth, gradually add 1.5 cups of icing sugar, 2 tablespoons of cocoa and 2 tablespoons of milk. Beat until combined and even in colour.
