Chocolate Potato Cake
This is a cake I used to make when I was about 14 years old ... Almost a classic now!! Enjoy it, cos its yummy, just a little different.
Ingredients:
125g butter
2/3 c. castor sugar
2 eggs
1/2 c. cold, mashed potato
1 1/4 c. self-raising flour
1/3 c. cocoa
1/3 c. milk
Method:
- Grease a ringpan and lightly coating with flour - shake out excess.
- Mix the cocoa and self raising flour together. Set aside.
- Cream butter and sugar together in a small bowl until light and fluffy.
- Beat in eggs, one at a time until well mixed in.
- Stir in half the potato, flour and cocoa mix and half the milk.
- Stir in the remainder ingredients, stir until smooth.
- Spread mixture into prepared cake tin.
- Bake in a moderate oven for 40 minutes.
- Stand for 5 minutes before turning out onto a wire rack.
- Cool the cake before spreading with icing.
Beat 90g of butter until smooth, gradually add 1.5 cups of icing sugar, 2 tablespoons of cocoa and 2 tablespoons of milk. Beat until combined and even in colour.
