Mexican Couscous

1/4 c. instant couscous
1/4 carrot , grated
1/4 corgette (zuchinni), grated.
1/2 - 1 glove garlic crushed
1 tsp taco seasoning mix
Salt, Pepper,Chili powder (to taste)
Boiling Water - Just to cover all the above ingredients.

Method:
  • Stir to combine the above ingredients.
  • Microwave on HIGH for 2 minutes.
  • Stand for 2 minutes, fluff with fork.
  • Use as desired.
Suggestions:
  • Stuff a red pepper (capsicum); top with grated cheese and bake for 30 minutes.
  • Serve with a stirfry of vegetables and meat, in a tomato salsa sauce.
  • Serve with a skinless breast of chicken, roasted with salt, pepper and garlic.
  • Serve with 1 corgette which has been sliced and sautéed in a little butter, olive oil, a clove of garlic and seasoned with salt and pepper.
